Soy, oyster and fish sauce
Most stir-fries start with one of these three. Soy comes from Kikkoman, Yamasa and Pearl River Bridge in light and dark, or as an organic tamari from Ceres Organics or Chantal Organics. Oyster sauce comes from Orchid, Haday, Mega Chef and Exotic Food, and Golden Sun and Poonsin make fish sauce. ABC Kecap Manis is the sweet soy.
Sweet chilli and something hotter
For sweet chilli, choose between Gregg’s, Trident, Orchid and a 50% Less Sugar version from Golden Sun. For more heat, Lee Kum Kee makes a Chilli Garlic Sauce and a Hot Chilli Soy, and HIDILAO hot pot dipping sauces come original or spicy.

What is the difference between light and dark soy sauce +
Light soy is the thinner, saltier one, used for seasoning and dipping. Dark soy is thicker and darker, and is used more for colour and depth in braises and fried rice. Pearl River Bridge makes both, so it is easy to keep one of each in the cupboard. See Pearl River Bridge Dark Soy →
