What is the difference between a curry paste and a simmer sauce ＋
A paste is concentrated spice that you cook first and then build into a curry with your own liquid, following the pack. A simmer sauce is ready to pour over the meat or vegetables. Patak's makes both for Butter Chicken, Korma and Tikka Masala, so you can choose by how much time you have.
